Grandpa Lou's Favorite Peanut Butter Cookies

Preheat oven to 350 degrees
Ingredients:

1 Cup Sugar
1 Cup Peanut Butter
1 Egg
1 teaspoon Vanilla

Mix all ingredients together until combined, then roll into one inch balls.
Place onto ungreased cookie sheets. Sprinkle each ball of dough with granulated sugar then press down with end of dinner fork to make lines in top of each cookie (before baking) .
Bake at 350 degrees for 10-12 minutes.

Easy Baked Lemon Chicken







 This came out really moist with a light lemon flavor...thumbs up! :)


Lemon Chicken Recipe (taken from All-Recipes.com)
"Fresh lemon juice makes this quick and easy chicken dinner exceptionally mouth-watering. For a crunchier crust, skip covering the baking dish with foil."
Ingredients:
3 large skinless, boneless chicken breast
halves
1/4 cup water
1/2 cup olive oil
2 lemons, juiced
1/2 cup bread crumbs
1 tablespoon garlic powder
1 tablespoon dried parsley
1 teaspoon paprika
salt and ground black pepper to taste
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Arrange chicken breasts in a large baking dish. Pour water, olive oil, and lemon juice over chicken; sprinkle with bread crumbs, garlic powder, parsley, and paprika. Season with salt and pepper. Cover baking dish with aluminum foil and cut a few slits in foil to vent.
3. Bake chicken breasts in preheated oven until no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

Irish Soda Bread

This is the most amazing recipe! The bread bakes up wonderfully in a 9 inch cake pan, and comes out with a moist inside also. I make this recipe every year! This is a recipe I found on Allrecipes.com.

**I spray pans with non-stick spray before filling. I only use 2 CUPS of Raisins, it is plenty enough! I bake the bread for a FULL 75 minutes...after 60 minutes I cover the bread with foil all around the edges so they do not get too brown.

Ingredients:
1/2 cup white sugar
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3 cups raisins
1 tablespoon caraway seeds
2 eggs, lightly beaten
1 1/4 cups buttermilk
1 cup sour cream
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cast iron skillet or a 9 inch round baking or cake pan.
2. In a mixing bowl, combine flour (reserving 1 tablespoon), sugar, baking powder, baking soda, salt, raisins and caraway seeds. In a small bowl, blend eggs, buttermilk and sour cream. Stir the liquid mixture into flour mixture just until flour is moistened. Knead dough in bowl about 10 to 12 strokes. Dough will be sticky. Place the dough in the prepared skillet or pan and pat down. Cut a 4x3/4 inch deep slit in the top of the bread. Dust with reserved flour
3. Bake in a preheated 350 degrees F (175 degrees C) oven for 65 to 75 minutes. Let cool and turn bread onto a wire rack.
