Easy Baked Lemon Chicken







 This came out really moist with a light lemon flavor...thumbs up! :)


Lemon Chicken Recipe (taken from All-Recipes.com)
"Fresh lemon juice makes this quick and easy chicken dinner exceptionally mouth-watering. For a crunchier crust, skip covering the baking dish with foil."
Ingredients:
3 large skinless, boneless chicken breast
halves
1/4 cup water
1/2 cup olive oil
2 lemons, juiced
1/2 cup bread crumbs
1 tablespoon garlic powder
1 tablespoon dried parsley
1 teaspoon paprika
salt and ground black pepper to taste
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Arrange chicken breasts in a large baking dish. Pour water, olive oil, and lemon juice over chicken; sprinkle with bread crumbs, garlic powder, parsley, and paprika. Season with salt and pepper. Cover baking dish with aluminum foil and cut a few slits in foil to vent.
3. Bake chicken breasts in preheated oven until no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

Lemon Bundt Cake


This is sort of a made up version..a made up one that I created quickly tonight! lol

Preheat oven to 350 Degrees

Ingredients:
For Cake:
One box of white cake mix (that lists one cup of water in the ingredients)
1/2 cup of Lemon Juice

For Icing:
2 Cups of 10x Powdered confectioners Sugar
4 Tablespoons of Butter Melted
4 Tablespoons of Lemon Juice


Mix ingredients for cake as directed on the back of the box of cake mix..EXCEPT! For one cup of water, only use 1/2 a cup of water...then add 1/2 a cup of LEMON JUICE. This will give you your full one cup of liquid.
Mix with electric mixer for a full 2 minutes.

Pour into a greased (I use Pam baking spray) bundt pan.
Bake as directed on box from cake mix for the amount of minutes for bundt pan.

Just before cake is taken out of oven, mix ingredients for icing in a separate bowl..mix well till smooth..then, pour over warm cake.


This cake turned out fantastic! So moist and delicious. I didn't think I could substitute the lemon juice for the water when making the cake..but just that half a cup of lemon juice, and a half a cup of water worked like a charm.
